The cookies will not be cooked in this class, just decorating. The cookie recipe will be provided. This class is permitted for students 14 years of age and older.

Summer Yeasted Bread - Hands On

Come make decadent enriched yeasted breads in this class where you'll learn the basics of working with yeast and gluten to make one enriched dough, which will be used to make a variety of summer themed pastries. Enriched dough is yeasted bread that has added eggs, butter and sugar. It is richer and more lush than typical yeasted bread. This class is permitted for students 16 years of age and older.

About Erica: Chef Erica Weakley is a professional pastry chef who graduated from the Culinary Institute of America. She has worked in food styling and recipe development along with diving into the world of chocolate. Pastry Arts has been a passion since she was young, and she has spent the last 8 years judging local competitions and teaching her passion at a local college. Now as a mother to two, she is teaching her culinary and pastry skills at CTE in Albany to high schoolers and young adults with special needs. Her love and talent for teaching is just as exceptional as her passion for pastry.
