In this class, we will travel to the warm and wonderful Northern African country and taste the balance of sweet and spice using ingredients like preserved lemons, olives, and ripe tomatoes. We will make and eat salads and side dishes, and use a Tagine (Moroccan cooking vessel). This class is appropriate for students 18 years and older.

- Chicken tagine with apricots and olives
